Tasting notes

Its color is limpid on tones of coral.
It develops an aromatic bouquet reminiscent of red fruits such as raspberry, blackcurrant, on citrus notes, enveloped by scents of violet, rose and hyacinth. We find the same aromatic characteristics on the palate with hints of spices as well as a savory and juicy palate, long, balanced with a very coated and refreshing acidity.
A rosé that we will appreciate as well as an aperitif or as an accompaniment to Mediterranean cuisine, bellota jabugo ham, slightly spicy dishes, exotic, Asian cuisine, fish tartare, poultry as well as grilled white meats flavored with Provence herbs.

Blend: Mourvèdre 80%, Grenache 15%, Cinsault 5%
Soil: Clay and limestone
Culture: Organic farming, certified by Ecocert Label
Yield: 28 hl/ha
Average age of the vines: 20 years
Harvest: Manual in small cases, double sorting, total destemming, crushing and pressing slow berry, at low pressure, following maceration for a few hours, before alcoholic fermentation.
Vinification: Fermentation with yeasts natives
Aging: on finelees in inox tanks
Bottling: At the estate in March 2022
