Tasting notes

Cut for aging, it’s coral dress is intense shine and shimmering.
The bouquet is characteristic of Mourvèdre where red fruits blend with spices and scents of garrigue. On the palate, the red fruits are carried by notes of zest, spices and thyme. A beautiful, slightly iodine finish, sapid and refreshing.
Although this rosé wine has an undeniable aging potential, its burst of fruit on the palate is very attractive today.
Summer and winter, this Irreducible 2019 will go perfectly with grilled fish, crustaceans, Mediterranean dishes, spicy cooking., asiatic cuisine, poultry, leg lamb studded with garlic scented with rosemary.

Blend : Mourvèdre 95%, Grenache 5%
Soil: Clay and limestone
Culture: Organic farming, certified by Ecocert Label Yield: 25l/ha
Harvest: Manual in small cases, double sorting, total destemming, crushing and pressing slow berry, at low pressure, following maceration for a few hours, before alcoholic fermentation.
Vinification: Fermentation with yeasts natives
Aging: on finelees in inox tanks Bottling: At the estate in March 2021
