Technical notes: Cuvée from the highest parcel of the appellation, overlooking the sea, at an altitude of 410 meters, benefiting from a strong sunshine during the day, tempered by the sea breeze and the coolness of the nights. Origin : AOC Bandol Blend : Mourvèdre 95%, Grenache 5%. Soil : Clay and limestone Culture : Organic agriculture certified by Ecocert since 2006 Yield : 21 hl /hectare Harvest : Manual harvest in small boxes. Vinification : Sorting table, total destemming, crushing of the berries and long maceration with regular manual punching down every 3 hours for an optimal phenolic extraction. Alcoholic fermentation for 9 days and malolactic fermentation during maturation in wood. Maturing : 18 months in 600 liter demi-muids and 30 and 40hl tuns.
